Being Texas, this recipe includes jalapeno, but it is still pretty good without it. This recipe is inspired by and uses products from Lane’s BBQ.
Ingredients:
4 ripe medium-sized avacados
1/2 of a small red onion, minced. You can substitute a white or yellow onion to tone down the pungent.
2 roma tomatoes, diced
1 jalapeno chopped. Include the seeds if you want more heat.
1 clove of garlic minced
1 Tbsp of cilantro, chopped
A squeeze of lime juice
2 Tbsp of Lane’s Scorpion Rub. If you cannot find this since it was out of stock, you can swap in Lane’s Fiesta rub or something similar.
Directions:
Cut avacados in half, removing the pit. Using a large spoon scoop out the avocado from the skin into a bowl.
Using a fork, mash the avocado until the desired creaminess.
Add onion, jalapeno, garlic, and tomatoes. Add a squeeze of the lemon slices and the rub seasoning.
Mix everything together thoroughly and salt and pepper to taste.
Garnish with cilantro on top.
