Spicy Coriander Pan Potatoes
These spicy potatoes are a delight. The blend of garlic, cumin, coriander, and red pepper flakes are a unique combination of flavors. While not all of our family likes spicy food, this dish is a family favorite.
Ingredients:
2 potatoes cut into bite-sized cubes. We use Russet or red potatoes; white potatoes should work fine as well.
3 Tbsp of olive oil
2 tsp of ground coriander
1 tsp of garlic
1 tsp of cumin
1 tsp of red pepper or red chili flakes
Salt and pepper to taste
Optional garnish - cilantro, sour cream, and green onions
Directions:
Dice the potatoes into bite-sized chunks and place in pan with olive oil at medium to medium-high heat. Fry the potatoes until golden brown on all sides. This could take 10-20+ minutes depending on the amount of potatoes. Remove the potatoes and place on paper towels.
In the pan, sauté the garlic for about 1-2 minutes until fragrant. Add the potatoes and spices, tossing the potatoes until they are evenly coated. Salt and pepper to taste.
Garnish with cilantro, sour cream, and/or green onions.
