Tangy Cucumber Salad

Tangy cucumber salad is hard to beat in summer months. The combination of red onions, vinegar, and olive oil is very refreshing served cold. What follows is a simple approach to the tangy cucumber salad.

Ingredients:

  • 2 medium sized cucumbers, thinly slicved

  • 1 Roma tomato, roughly diced

  • 1/2 red onion, chopped

  • 2 Tbsp Olive oil

  • 2 Tbsp of Dill, chopped

  • 1/4 C of vinegar (apple cider, red, balsamic, or white)

  • Salt and pepper to taste

Directions:

  1. Mix the cucumbers, tomatoes, onion, oil, dill, and vinegar in a mixing bowl.

  2. Salt and pepper to taste.

  3. Place in refridgerator for an hour before serving.
