Spiced Pickle Appetizer
One of my favorite restaurants in Dallas (Hudson House) serves a spiced pickle as an appetizer along with the main dish. We attempted to recreate the recipe using four different types of seasonings — Cayenne, Cajun, Old Bay, and Paprika. Old Bay was the clear winner. Ideally, serve the half-pickle slices cold and garnish with chives and red chili flakes.
Ingredients:
2-4 pickles, refrigerated and sliced into halves lengthwise
McCormick’s Old Bay seasoning to taste
Optional garnish with chives and/or red chili pepper flakes
Directions:
Slice the pickles into halves lengthwise.
Gently dust the top surface of the pickles with Old Bay seasoning. A little goes a long way with this recipe.

Note - this dish is best served cold, so refrigerate after preparing before serving.
