Everything Bagel Potatoes

This recipe is a surprisingly good side dish with minimal ingredients and effort. The inspiration for this recipe is an “everything bagel wedge salad” served by our local favorite restaurant Cedar & Vine. Also, I absolutely love the combination of flavors in everything bagels, so I experimented with the idea that this flavor profile would be equally good when using potatoes instead of bread. This one really delivers while remaining simple to make.

Ingredients:

  • 1-2 pounds of potatoes. I typically use red potatoes, but russet or white potatoes would work as well

  • Butter

  • Salt and pepper

  • McCormick’s Everything Bagel seasoning

  • Optional garnish with chives, green onions, or sour cream

Directions:

  1. Slice the potatoes into manageable chunks or wedges.

  2. Boil for approximately 15 minutes.

  3. Add butter to the strained potatoes such that it melts all over.

  4. Sprinkle the potatoes with the Everything Bagel seasoning and toss while continuing to coat.

  5. Salt and pepper to taste.

  6. Garnish with chives, green onions, or sour cream.

  7. Note - boiled potatoes will remain quite hot for up to 30 minutes, so this dish can be prepared ahead of an entree.
