Sloppy Joe Stuffed Green Peppers

This entree has a something for everyone: ground beef for the meat lovers, a generous portion of vegetables in the form of bell peppers, and a wonderful surface for adding all kinds of cheese and sour cream. It’s also a modern take on the 1980s classic Manwich or Sloppy Joes, replacing the bun with a bell pepper. Spending on the sloppy Joe sauce of choice, this kind be a paleo friendly dish.

Ingredients:

  • 1-2 pounds of ground beef

  • 3 bell peppers (green, red, yellow, or orange)

  • Preferred sloppy Joe mix (we use Manwich)

  • 1/2 - 1 yellow onion, chopped

  • Cheddar or other cheese as an optional garnish

  • Other garnishes include sour cream, cilantro, jalapeño, and green onions.

Directions:

  1. Preheat the oven to 400 degrees.

  2. Place some oil in the pan at medium heat to cook the chopped onions until translucent.

  3. Add ground beef, salt and pepper to taste, and brown the beef. Drain the excess fat. Add sloppy Joe mix of choice. We have tried several different ones, but I prefer Manwich sauce.

  4. While the beef is cooking, slice the top off the peppers, remove all seeds, and arrange in a baking pan with foil.

  5. Fill each of the peppers with the sloppy joe meat.

  6. Cook in the oven for approximately 45 minutes. If you would like to add cheese to the peppers, pull the pan at the 40-minute mark to add the cheese.

  7. Garnish with green onions, cilantro, jalapeno, etc.
