Simple Chicken Salad (Texas Style)
While this chicken salad recipe only has 6 ingredients, it is big on flavor and quick and easy to make. The secret ingredients are dill pickles and lime juice to brighten the flavor. This dish can be quickly made and is a star at potlucks. You can add a little more Texas by garnishing with jalapeños and dusting with our San Jacinto spice blend.
Ingredients:
3 Cups cooked chicken, finely shredded
1/2 Cup of celery, small dice
1/2C crispy green apple, small dice
1/2 Cup mayonnaise
2 Tbsp dill pickles, finely minced (can swap in dill pickle relish)
1 tsp fresh lime juice (Texas brightness)
Dusting of San Jacinto spice blend
Salt and pepper to tase
Optional Garnishes (Texas Touch):
Fresh cilantro, chopped
Pickled jalapeños
Directions:
Combine the chicken, celery, and apple in a bowl. For the chicken, any type of cooking method will work — we usually use rotisserie chicken. The key is to use a pair of forks to shred the chicken before chopping.
Add mayonnaise, minced pickles (or relish), and lime juice.
Mix well until evenly coated.
Season with salt and pepper. Dust the top with San Jacinto spice blend.
Chill 30-60 minutes before serving.
