Game-Winner Chicken Wings
Good chicken wings are hard to beat as a sports watching appetizer or meal. Think football. In creating this recipe, I was looking for crispy wings without deep frying or battering the wings. Both taste great, but I was aiming for something reasonably healthier and more paleo. “Game-Winner Chicken Wings” is my best approach to crispy, spicy, and somewhat healthy chicken wings.
Ingredients:
2 1/2 pounds of chicken wings pieces
1/3 C of butter
Avacado or olive oil
Salt and pepper
Directions:
This recipe is based on the Frank’s RedHot Original Buffalo Chicken Wings recipe with modifications to increase crispiness.
Preheat the oven to 400 degrees.
After rinsing chicken wings, thoroughly dry with paper towels and place on a rack in the baking tray. It is critical to get all of the chicken dry before baking. Dry = crispy. Also critical to use a rack instead of placing the chicken directly on the pan since the rack allows air to get under the wings while cooking enhancing the crispiness.
Spray the wings with avacado or olive oil. Season with salt and pepper. Flip the pieces and repeat the process.
Place wings in oven. At the 40-minute mark, flip the pieces over and cook for another 20 minutes.
Remove from oven and place wings in a large mixing bowl. Add butter and stir the wings until the butter is completed melted. Next, add the Frank’s RedHot Original Cayenne Pepper Hot Sauce and repeat stirring.
At this point you have a choice — (1) serve the wings as is or (2) place them back in the even to bake for about 5-10 minutes to get a cooked on result. I like them either way.
Serve on a tray and garnish as desired. Since I like both Ranch and Blue Cheese, we serve with both (why choose?) along with chopped green onions and occasionally sesame seeds.
Note - Frank’s RedHot also makes a variety of wing sauces that can be used in this recipe in place of the RedHot Original Cayenne Pepper Hot Sauce. I tired a variety of the wings sauces and combinations of half wings sauce and half RedHot Original Cayenne Pepper Hot Sauce. After all this experimentation, I landed on simply using only the RedHot Original Cayenne Pepper Hot Sauce. If we have guests, I will sauce about half the wings using only the Frank’s RedHot Mild Wings Hot Sauce. Their Nashville Hot Wings Sauce looks interesting and likely will be used on our next wings.
