Quick Chicken Noodle Soup Paleo Style

This recipe includes a quick chicken noodle soup with two options: (1) traditional cooking style using roasted chicken (quick and easy) and (2) a bone broth style. Chicken noodle soup in winter time is hard to beat as an easy weekend feast. This recipe can be prepared in under an hour — or you can slow cook it for deeper flavor. Regardless of the approach, this soup satisfies without requiring processed food making it paleo friendly. The second version of the recipe creates a home-made bone broth from the chicken carcass.

Ingredients:

  • 1 roasted chicken

  • 4-5 carrots, medium diced

  • 1 yellow onion, diced

  • 6 celery sticks

  • Olive oil or bacon fat, 2 T

  • Garlic, 4 cloves finely chopped

  • Chicken Broth, 2 32-ounce containers

  • Italian Seasoning, 2 tsp

  • Parsley, 2 tsp

  • Salt & cracked black pepper, to taste

Optional Garnishes (Texas Touch):

  • Fresh cilantro, chopped

  • Pickled jalapeños

  • Crispy tortilla strips or cornbread crumbles

  • Mozzarella cheese or parmesan cheese

Directions:

  1. Prepare the chicken. Pull the chicken from the bones removing skin and excess fat. Shred the meat and set aside. Note: browning the meat before placing into the pot will provide better flavor, but not necessary.

  2. Saute the vegetables. In a pot on medium high, place the olive oil or bacon grease in the bottom. Add the vegetables and some salt and pepper. Cook the vegetables turning every few minutes until the onions become translucent. Add the garlic and cook for another minute.

  3. Combine the ingredients. Add the two containers of chicken broth to the pot, the chicken, and Italian Seasoning and parsley. Salt and pepper to taste.

  4. Cook the Soup. After bringing the mixture to a boil, turn down the heat to simmer and allow to cook for at least 60 minutes. Longer is better.

  5. Prepare the Noodles or Rice. Rather than combining the noodles with the soup and having them getting overly mushy, I recommend preparing the noodles right before serving and adding to the soup as the last step.

  6. Rest & Serve.

Bone Broth Chicken Noodle Soup: A different approach to this chicken noodle soup recipe is to the boil the bones and chicken carcass in a stock pot for 2-4+ hours, which will create its own broth that can be substituted for store bought chicken broth.
